Influenced by his childhood among poultry, pigs cows and sheep in the family farm as the flavors and scents of his mother’s cooking, (his mother, Mary being a cook quite  appreciated in her time by connoisseurs' circle)
he quite naturally works on a big range of high-quality agricultural products and with  the rich culinary heritage of Southwest which he freely interprets with  his  own inspiration and  with a touch of modernity.
